These healthier Cranberry Bliss Bar-inspired bites are lower in refined sugar, use healthier fats, and offer some fiber from almond and coconut flour. Enjoy this guilt-free treat!
Ingredients
Healthy Cranberry Bliss Bites
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/3 cup dried cranberries, unsweetened or lightly sweetened
- 2 ounces of dark chocolate or ¼ cup dark chocolate chips
For the Glaze
- 2 tablespoons Greek yogurt
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon lemon zest
- 1/2 teaspoon lemon juice
Instructions
- Preheat and Prepare — Preheat your oven to 350°F. Line an 8” x 8” baking pan with parchment paper.
- Mix Dry Ingredients — In a bowl, mix almond flour, coconut flour, baking soda, and salt.
- Combine Wet Ingredients — In another bowl, whisk honey or maple syrup, melted coconut oil, egg, and vanilla extract.
- Combine Wet and Dry Mixtures — Combine the wet and dry mixtures and stir until well combined. Fold in the dried cranberries and dark chocolate.
- Form Dough and Bake — Press dough into the 8” x 8” baking pan. Bake for 10-12 minutes or until lightly golden around the edges. Please note: baking times may vary
- Prepare Glaze — While the bars are baking, prepare the glaze by mixing Greek yogurt, honey or maple syrup, lemon zest, and lemon juice.
- Cool and Glaze — Allow the bars to cool completely. Once cooled, drizzle the glaze over the top.
- Slice and Serve — Cut into bars or bite-sized pieces and serve. (They will cut easier if placed in fridge till cold.)
