A favorite mainstay of low carbohydrate diets, this dish works without refined sugar and can be easily adapted for a vegan diet. Good fats, potent phytonutrients, and delicious flavor — a tasty ending to a healthy meal.
Chocolate Avocado Mousse Recipe
Ingredients
- 1 large or 2 medium avocados
- 1/3 cup cocoa powder
- 1 tablespoon vanilla
- Sweetener (chose one): 2 tablespoons honey or 1 tablespoon of monk fruit, stevia or allulose
- 1/4 cup whipped cream, coconut milk or cashew cream
Instructions:
- Peel and pit the avocado/s.
- Add to a food processor or blender along with cocoa powder, vanilla and your sweetener of choice.
- Process or blend until smooth.
- Taste and add more sweetener if you desire.
- Spoon the mousse into serving bowls and top with whipped cream, coconut cream (you can buy whipping coconut cream) or cashew cream.
- Decorate with grated chocolate, a sprinkling of cocoa power or raspberries, or add some crunchy salt such as flaky sea salt.
Cashew Cream Recipe
Ingredients:
- 1 cup raw cashews
- 1 cup water
Instructions:
Step 1: Cover cashews with hot water and soak for 20-30 minutes
Step 2: Drain cashews and add to a high-speed blender with 1 cup water.
Step 3: Blend on high until completely smooth, about 1 minute.
